Rosmarinic acid competes with unsaturated fatty acids and binds to lipid peroxide groups in human body, terminates the chain reaction of lipid peroxidation, reduces the rate of lipid peroxidation, and plays an excellent antioxidant role. Studies have shown that the hydroxyl group of catechol is the material basis for scavenging free radicals.
Rosmarinic acid has a broad spectrum of antibacterial activity, which can increase the permeability of bacterial cell membrane, cause a large amount of carbohydrate and protein leakage, and affect the normal metabolism of bacteria. On the other hand, it can also affect the protein metabolism of bacteria and inhibit Taq, DNA and polymerase. Studies have shown that rosinic acid can inhibit bacteria and fungi, and has obvious inhibitory effect on Bacillus subtilis, micrococcus luteus, Escherichia coli, Staphylococcus aureus and rice grain subtilis. It can also inhibit the growth and biofilm formation of Streptococcus caries and Streptococcus mutans, and reduce the activity of glucosyl transferase.
